Their goal is to make honest, handcrafted, food-friendly wines for everyday drinking. Lo-Fi’s winemaking philosophy--”nothing added, nothing taken away”--is exactly what we celebrate at minimo. For them it means native yeasts, whole-cluster fermentation, minimal sulfur additions, neutral barrels for aging. The results are fresh and delicious.
